    David Johansen
    I was Born in 1981, and have lived and breathed for cooking since I could walk. I have been the head chef at Kokkeriet for the last 5 years, known as the world's only Michelin restaurant offering the Danish cuisine.

    My relationship with food is a lifelong and monogamous loving relationship, which can be described with the following three words; passion, obsession and honesty.
    Food is most stunning, when it tells its own story, and when the ingredients are in focus and treated with profound respect.

    For me food has to evoke memories and have an identifiable element, and at the same time it has to surprise the senses and the mind. A dish has to be true to its origin, but it is important that it bears the mark of the chef’s interpretation. For me the simple traditional fare, if created perfect, give just as good an experience as a modern and technical demanding dish.

    I want to create food of high gastronomic quality, which gives me and not at least our guests joy - in such a degree that you almost rather eat another portion, than being served the next dish.

    Lazy and sloppy chefs.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    Passion, love and creativity is the best ingredients I know.
     
    Sloth - What do you do to unwind?

    As long as I'm with my wife and daughter I relax completely.
     
    Pride - What are you most proud of?

    I am very proud to be able to pursue my dreams and still be there for my family and friends.
     
    Lust - Is there anything that you are still lusting to achieve?

    I have a lot I still want to achieve. I always make myself new goals, and I am never quite satisfied with what I have achieved, so it's a battle with myself, I will never win.
     
    Envy - who are you most envious of?

    I envy people who can be content with things the life has given them, and not constantly searching for more recognition and respect.
     
    Gluttony - have you ever over indulged?

    Never ever have I given up a goal I have set myself. That's my basic philosophy of life to seek and to achieve my goals, and I will not stop until I have succeeded.
