    When I arrived from Bolivia at the age of 19, with shaky English, I worked at Downside School, in Somerset looking after the boarders’ dining room - a tough training ground, if ever there was one! I realised quite quickly that because I was friendly, efficient and got on well with the students, service was the place where I really felt I could make a difference.

    For me, the customer is king. Even when the customer is being awkward or is wrong (which happens more than you would imagine), there is always an elegant way to remedy the situation and the onus is on the restaurant management to do this with grace. I have been at Le Caprice since its reincarnation, September 1st 1981.

    In addition to maintaining the Le Caprice brand over the years, I have been an acting Board Member of Caprice Holdings for the last 22 years.

    Wrath - What makes you angry about the hospitality industry?

    Cowboys, which means, front of house staff giving bad service, attitude to customers, cutting corners and not realizing that good service is integral part of our career.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    A crusty French loaf with olive oil, sliced onions and plenty of avocado: it reminds me of what my mother would give me every so often when I was a young boy in Bolivia.
     
    Sloth - What do you do to unwind?

    A lazy Saturday afternoon, after lunch at home, sitting on the sofa, having a nap before going to work in the evening.
     
    Pride - What are you most proud of?

    My two beautiful daughters, young ladies now. The 33 years that I have been working at Le Caprice. To have worked with Jeremy King and Cristopher Corbin. Now to be working for Richard Caring.
     
    Lust - Is there anything that you are still lusting to achieve?

    Not personally but, helping my Italian friend open his own restaurant and guiding him to fulfilling his dream and ambition gave me a great sense of achievement.
     
    Envy - who are you most envious of?
    Jesus Adorno Seven Sins
    I don’t envy anyone; I admire my colleagues and the people I know in Hospitality.
     
    Gluttony - have you ever over indulged?

    Give me any tropical fruit and I can have a lovely time enjoying every mouthful. I'm hooked!
