Born in Scotland, Felicity Hall has worked extensively in the hospitality industry and over the past twelve years has developed comprehensive knowledge of the food and drink sectors both in the UK and abroad.
In 2007, she spent a year working at the Goodwood Park Hotel in Singapore, developing her understanding of Chinese cuisine and culture.
In 2008, she returned to the UK and began assisting with the creation and development of Min Jiang restaurant and bar, which launched that year, and Felicity has been GM since then.
She also holds various wine qualifications from the WSET, including a level three advanced certificate in wines and spirits, and is in charge of the creation and maintenance of wine and beverage lists for the Royal Garden Hotel. |

Wrath - What makes you angry about the hospitality industry?
People who try to take advantage of it. Many hospitality professionals do it for the pleasure it brings, some guests take advantage of this and can make your working day quite unpleasant as a result.
Greed - If all your food fantasies came true what would be on your Plate?
Probably a multi-cultural mess! I love Indian spices, fresh seafood, juicy steaks, Hot Sichuan Chillies, Fresh berries and dark chocolate!
Sloth - What do you do to unwind?
A hot bath, good book or a gripping crime drama and a big glass of red wine.
Pride - What are you most proud of?
My job, having been with Min Jiang from the very beginning it’s like my baby…and everything I do there and that happens there is very personal to me
Lust - Is there anything that you are still lusting to achieve?
I would love to own my own restaurant and or wine bar one day.
Envy - who are you most envious of?
Anyone who owns their own successful restaurant or wine bar.
Gluttony - have you ever over indulged?
Frequently! I often have to have a lie down after a home cooked meal as I tend to cook all my favourites at once and insist on trying to finish everything.
