    Graham Hornigold
    Graham Hornigold is a Pastry Chef with over 20 years of professional experience in the industry.  Graham attended Thames Valley University in 1997 and graduated with a degree in Culinary Arts Management.  Graham has worked across small boutiques, retail operations, world renowned five-star hotels and restaurants across Europe, the Middle East, Asia, India and the United States. 

    Following Hakkasan Group’s rapid expansion, Graham has set up new pastry kitchens in Mumbai, Dubai and New York and currently manages a team of 100 across over 19 restaurants.  Graham has fast built an excellent reputation for himself as Executive Pastry Chef of the Group and is responsible for the global pastry production across the groups’ restaurants. 

    Graham is based in London where he manages a strong team of 34 highly skilled chefs overseeing all dessert preparation for Sake no Hana, Hakkasan Hanway and Mayfair 1*, HKK 1* and the famed handcrafted petit-gateaux, macarons and pralines at Yauatcha 1*.
     
    Wrath - What makes you angry about the hospitality industry?

    The lack of understanding, regarding how mentally tough you need to be in this industry. The second class status still adopted by many chefs with regards to the pastry section. And the sometimes dispassionate chefs whom believe cooking is just a job rather than a way of life, no passion in the chef equals no passion or love in the cooking. You have to want to be the best you can be and never stop learning not just for you, but for all those chefs who look to you for inspiration and that happens at all levels, not just with head chefs.
     
    Greed - If all your food fantasies came true what would be on your Plate?

    Steak, lamb rump, griddled asparagus, sundried tomatoes, rocket with shaved parmesan. Yum!
     
    Sloth - What do you do to unwind?

    Cooking with my kids, gym time or getting online, FIFA football, PlayStation or catching up my individual head chefs and having some development time.
     
    Pride - What are you most proud of?

    My kids! That’s those at home and those who have worked past or present with me in any form through industry. Especially those who have been with me a longtime and given so much to achieve mine and assist in some of their goals. (You know who you are!)
     
    Lust - Is there anything that you are still lusting to achieve?

    Always! More operations, more products, more knowledge! Hopefully more openings and a chance to progress within Hakkasan with our new acquisitions and ongoing expansion I would love for my role to develop within this group.
     
    Envy - who are you most envious of?

    Thin people! Honestly not many people. Be happy with who you are, what you have and where you came from. Makes for a better life.
